These recipes have been provided courtesy of Stahlbush Island Farms.  Stahlbush products can be found in your local health food market as well as at Henry's, Wild Oats and Whole Foods.

Baked Sweet Corn
Based on a classic comfort food, this recipe uses Super Sweet Corn (instead of adding sugar) for a naturally fresh and sweet taste.

Servings 4 to 6

Ingredients

  • 1 10 oz bag frozen Stahlbush Super Sweet Corn
  • 2 tablespoons butter
  • 1 1/2 tablespoons flour
  • 1 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon cayenne pepper
  • 2 eggs, beaten

  • Directions

    Preheat oven to 350 degrees.

    Melt butter over low heat in a saucepan and stir in flour. Add milk gradually and bring to a boil at medium heat, stirring constantly.

    Add corn, salt, and pepper and keep on stove until heated through.

    Remove from heat and add beaten eggs.

    Pour into a greased 1 quart baking dish. Bake at 350 degrees for 35 minutes.

    Spinach Cheddar Casserole

    Servings 8-10

    Ingredients

  • 4 eggs
  • 3/4 tsp salt
  • 1/2 tsp pepper
  • 1 10 oz package frozen Stahlbush Cut Spinach, thawed and squeezed dry
  • 1 16 oz container cottage cheese
  • 1 bunch green onions, chopped
  • 1 cup packed grated sharp cheddar cheese
  • 1/4 cup all purpose flour
  • 3 tablespoons chopped fresh dill or 1 tablespoon dillweed

  • Directions
    Preheat oven to 350°F. Butter 8" x 8" x 2" glass baking dish. Beat eggs, salt and pepper to blend in large bowl. Mix in spinach. Add remaining ingredients and stir until well blended. Transfer mixture to prepared dish. Bake casserole until center is firm and top is golden, about 45 minutes.
